Due to the position of the the doorways and the MEP shaft, the domestic hot and cold water needed to be routed around the room to access the lavatories:

In terms of challenges, there was two. I faced a similar problem with the Urinals as in the practice exercise. Additionally, placing the vertical piping needed multiple views to get it right as it was not possible in the 3D view. Perhaps spacing out the piping in the horizontal direction would help reduce the precision needed for modeling the vertical piping.
