What are the principal advantages of creating a conceptual design model using masses before diving into the detailed design and building element modeling?

Allows for the general shape of the building to be decided and agreed upon by client and designer. Allows for irregular and unique building masses to be created.

Should all buildings be modeled first using conceptual masses?

It is most appropriate for large scale buildings. A small home, if not unusually shaped, is probably not necessary to build using masses.
